Glyn Hughes is an actual food historian working with the University of Manchester, who has rendered the recipes into modern English and added copious explanatory notes. The 18th-century preface has been omitted, which is a bit sad as it is sometimes unintentionally hilarious; but still, if you want a reliable edition, this is the one.
